Ali Shan is a high-mountain oolong from the Ali Shan (Alishan) range in Chiayi County, Taiwan, grown at elevations above 1,000 meters. The cool mountain air, frequent fog, and rich soil produce leaves with a distinctive buttery texture, lilac-like floral fragrance, and a clean, sweet finish. Ali Shan exemplifies Taiwan's acclaimed gaoshan (high mountain) oolong category.

High-mountain oolongs like Ali Shan are best brewed slightly cooler than roasted oolongs to preserve their delicate floral notes. 90°C brings out the buttery texture and lilac fragrance. A porcelain gaiwan is preferred over Yixing clay so it does not absorb the subtle aromas.
