Ali Shan ranks among Taiwan's celebrated gaoshan, or high-mountain, oolongs, cultivated above 1,000 meters in the Alishan range of Chiayi County. Cool air, persistent fog, and the Qingxin cultivar combine to yield tightly rolled balls of leaf with a buttery texture and a lilac-like floral fragrance. Lightly oxidized to roughly 25 percent, it pours a pale golden liquor that finishes clean and sweet, holding a moderate caffeine near 22 milligrams and about 7 milligrams of L-theanine per 100 millilitres. Spring and winter pickings, gathered between 1,000 and 1,600 meters, are the most prized, when slow growth at altitude concentrates the aromatics. The rolled leaf opens gradually in the pot, sustaining flavor across several infusions.
