Zhengshan Xiaozhong is the original, unsmoked black tea of the Wuyi region, from the Tongmu Village Nature Reserve in Fujian. While its smoked export form became known as Lapsang Souchong, the authentic tea is processed over pinewood embers with very light or no smoke, letting a natural sweetness lead. The dark, wiry leaf brews a rich amber cup with longan fruit, dried lychee, and honey, a smooth pine-sugar fragrance, and a warming finish, carrying a caffeine near 35 milligrams. Oxidized near 92 percent and picked in May between 800 and 1,500 meters, it is counted among the world's oldest black-tea styles, the ancestor of every black tea that followed.
