Description

Junshan Yinzhen is the most famous yellow tea, grown exclusively on Junshan Island in Dongting Lake, Hunan province. Made from plump buds that stand upright in the glass when brewed (the famous 'three rises and three falls'), it has a smooth, mellow sweetness with subtle corn-like notes and none of the grassy edge found in green tea.

A glass cup is essential to enjoy Junshan Yinzhen's famous 'three rises and three falls' — the buds stand upright, sink, and rise repeatedly as they absorb water. Pour 80°C water first, then gently drop buds in. Do not cover. Three infusions are traditional.
