Grown only on Junshan Island in Dongting Lake, Hunan, Junshan Yinzhen is the most celebrated of yellow teas. Its plump single buds stand upright when steeped, sinking and rising in the famous three rises and three falls. A gentle yellowing yields a smooth, mellow sweetness with faint corn-like notes and none of the grassy edge of green tea, balancing a caffeine near 22 milligrams against 8 milligrams of L-theanine. Oxidized around 12 percent, the bud-only leaf is gathered in a narrow April window at low elevation, between 200 and 300 meters. Both its island terroir and its visual drama in the glass account for its lasting fame.

A glass cup is essential to enjoy Junshan Yinzhen's famous 'three rises and three falls' — the buds stand upright, sink, and rise repeatedly as they absorb water. Pour 80°C water first, then gently drop buds in. Do not cover. Three infusions are traditional.
