Orthodox processing follows the centuries-old approach of handling leaves gently to maintain their structure and allow gradual, controlled chemical transformation. After plucking, leaves are spread on withering troughs for 12-18 hours until pliable. Rolling machines twist the softened leaves, rupturing cell walls to initiate oxidation. The rolled leaves rest in a cool, humid environment while enzymes work, then firing in hot-air dryers halts oxidation at the desired level. The result is a range of leaf sizes — from whole leaves to broken pieces and fannings — each sorted into quality grades. Orthodox processing demands more time, labor, and skill than CTC, but rewards the drinker with layered flavors, aromatic complexity, and the ability to re-steep.
