Roasting

Roasting is an art within an art in Chinese oolong production, particularly for Wuyi rock teas and traditionally processed Tie Guan Yin. The tea master applies heat in multiple sessions over weeks or months, allowing the leaf to rest between firings so that the internal chemistry can equilibrate. Charcoal roasting over longan or lychee wood is the most prestigious method, imparting subtle smoky-sweet undertones impossible to replicate with electric roasters. Light roasting (qing huo) preserves floral aromatics while adding warmth; medium roasting (zhong huo) develops caramel and toast; heavy roasting (zu huo) creates deep, chocolatey, minerally cups suited for aging. Over-roasting, however, produces a charred, hollow flavor that masks the tea's inherent character. The best roast masters bring decades of experience to reading the leaf — its moisture content, cultivar origin, and oxidation level — to determine the perfect roasting profile.
