The insect's feeding triggers a chemical defense that generates a distinctive honey-muscatel sweetness. Oxidized to about 65 percent, the multicolored white, green, red, and brown leaf brews a champagne-amber cup with honey, ripe peach, and rose, and a caffeine near 30 milligrams. Summer pickings in June and July, from the Qingxin Dapang cultivar at mid elevations, define this Taiwanese oolong, since the leafhoppers are most active in warm weather. Because the process depends on insects rather than technique alone, quality varies with each season's conditions.
