The West Lake area of Hangzhou in Zhejiang Province produces Longjing (Dragon Well), China's most famous green tea. The unique terroir combines acidic sandy-loam soil, ample spring rainfall, and the moderating influence of West Lake itself, which tempers temperature extremes. Pre-Qingming harvested Longjing, picked before the Qingming Festival in early April, commands premium prices for its tender buds and sweet, chestnut-like flavor. The traditional hand-pressing technique in a hot wok gives the flat, sword-shaped leaves their signature appearance and nutty aroma.
