Jade Dew — Japan's most prestigious shade-grown green tea. Shaded for 20+ days before harvest, gyokuro develops extraordinary umami depth, low astringency, and a sweet, marine character that sets it apart from sencha.

Gyokuro represents the pinnacle of Japanese tea craftsmanship. Like matcha, it begins with shade-growing, but unlike matcha, the leaves are steamed and rolled into fine needles rather than ground to powder. The extended shading period (minimum 20 days, often 30) dramatically alters leaf chemistry: L-theanine concentration can reach five times that of standard sencha, while catechins (which produce bitterness) are suppressed. The result is an intensely savory, almost brothy cup with notes of nori seaweed, sweet grass, and a lasting umami finish. Proper gyokuro brewing uses even lower temperatures (50-60 degrees Celsius) and higher leaf ratios than sencha, with steep times of 2-3 minutes for the first infusion. The best gyokuro comes from Uji (Kyoto) and Yame (Fukuoka), with Yame gyokuro winning the most national competition awards in recent decades.
