Description
A phenolic acid found both free and as part of gallated catechins (EGCG, ECG) in tea. Released during brewing and digestion when gallated catechins break down. Gallic acid contributes to tea's astringent, slightly sour taste. It is one of the most well-characterized natural antioxidants and serves as a reference standard in polyphenol research (gallic acid equivalents, GAE). Higher levels in teas processed with microbial fermentation (pu-erh).
