Description
The green photosynthetic pigment that gives tea its verdant color. Shade-grown teas (matcha, gyokuro) contain dramatically more chlorophyll than sun-grown varieties because the plant increases chlorophyll production to compensate for reduced light. Steamed Japanese teas preserve more chlorophyll than pan-fired Chinese greens. During oxidation, chlorophyll degrades into pheophytin (olive-brown), contributing to black tea's darker appearance. Matcha consumption provides the highest chlorophyll intake because the whole leaf is consumed.
