Made mostly in Kyushu, across Nagasaki, Saga, and Kumamoto, it skips the final straightening step of sencha processing. The result is a bright, tangy infusion with berry-like sweetness, citrus undertones, and a lively finish that sets it apart from other Japanese greens, with a caffeine near 18 milligrams and a soft 9 milligrams of L-theanine. Yabukita and Saemidori leaf is picked in April and May between 100 and 400 meters. Its regional roots in Kyushu keep it relatively unknown outside Japan.
