An inhibitory neurotransmitter that is naturally present in small amounts in tea but dramatically increased through anaerobic processing (GABA tea). Invented in Japan in 1987, GABA tea is produced by exposing fresh leaves to nitrogen gas, which triggers the conversion of glutamic acid to GABA. Standard teas contain less than 5mg GABA per 100g; GABA-enriched teas contain 150mg+ per 100g. GABA tea has gained popularity in Japan and Taiwan for its calming properties.
