Uji in Kyoto Prefecture is the most historically revered tea-growing region in Japan, credited with establishing Japanese tea culture after Zen monk Eisai introduced tea seeds in the 12th century. The Uji River's morning fog provides natural shade that boosts amino acid and L-theanine content, making Uji the premier region for shade-grown teas including matcha and gyokuro. Uji matcha sets the global standard for ceremonial-grade quality, prized for its vivid green color, rich umami, and smooth sweetness without bitterness. While Uji's production volume is small compared to Shizuoka or Kagoshima, its teas consistently command the highest prices in Japan.
