Fairness Pitcher
Định nghĩa
A small pouring vessel, also called a cha hai or gong dao bei, used in gongfu brewing to decant tea from the gaiwan or teapot. It ensures each cup receives liquor of equal concentration by mixing the tea before serving.
Chi tiết
The fairness pitcher solves a practical problem in gongfu service: when pouring from a gaiwan directly into multiple cups, the first cup receives lighter, less-extracted tea while the last cup gets the concentrated dregs. By decanting the entire infusion into the fairness pitcher first, the liquor mixes to a uniform concentration, and each guest receives an identical cup — hence the name gong dao bei, vessel of fairness. Most fairness pitchers are made from glass or porcelain, with glass being preferred by many enthusiasts because it showcases the tea's color and clarity. Capacity should match or slightly exceed the brewing vessel — a 150 ml gaiwan pairs with a 180-200 ml pitcher. The pitcher also serves as a cooling stage: hot liquor in the thin-walled glass pitcher drops a few degrees, reaching optimal drinking temperature by the time it is poured into cups. Some practitioners smell the empty pitcher after pouring, as retained aromatics can reveal aspects of the tea's fragrance not evident from the cup alone. The fairness pitcher is an essential piece of the gongfu tea table, sitting between the brewing vessel and the tasting cups in the service sequence.
