Description

Dong Ding is a classic Taiwanese oolong from Lugu Township in Nantou County. Traditionally medium-roasted, it offers a balanced cup with warm honey, toasted grain, and ripe fruit notes layered over a clean, smooth base. Dong Ding was the tea that established Taiwan's reputation as a world-class oolong producer in the 1970s and 1980s.

Recommended vessel: Porcelain gaiwan or Yixing teapot

Traditional roasted Dong Ding handles 95-100°C well. Modern light-roast versions are better at 90°C. Rinse once. The tightly rolled leaves expand substantially, so use a filling ratio of about one-third of the vessel. Pair with a tall aroma cup to appreciate the honey-grain fragrance.
