Cold Brew Green Tea

Introduction

{{glossary:cold-brew}} is the most forgiving green tea brewing method and arguably produces the most approachable cup. By eliminating heat from the equation, cold water selectively extracts the sweet, savory compounds (amino acids and simple sugars) while leaving most bitter catechins locked in the leaf. The result is a naturally sweet, smooth, refreshing tea with approximately two-thirds the caffeine of hot-brewed green tea.

The Science

Catechins require heat energy to dissolve efficiently — their solubility increases dramatically above 70 C. L-theanine and other amino acids, being smaller molecules, dissolve readily at any temperature. Cold water exploits this differential: during 8-12 hours of contact, amino acids extract fully while catechins extract minimally. This shifts the taste profile decisively toward sweetness and umami.

Method

Add 5-8 grams of green tea to 1 liter of cold, filtered water in a glass pitcher or bottle. Refrigerate for 8-12 hours (overnight is ideal). Strain and serve over ice or straight from the fridge. The concentrate keeps well for 2-3 days refrigerated.

Best Green Teas for Cold Brewing

Gyokuro: Transforms into a remarkably sweet, umami-intense cold brew that tastes almost like a light vegetable broth. Fukamushi sencha: The broken particles extract well even in cold water, producing a rich, deep green liquor. Kabusecha: Partially shade-grown, offering a balance of sweetness and grassy freshness. Chinese Longjing: Develops a clean, chestnut-sweet cold brew with floral undertones.

Japanese Mizudashi Tradition

In Japan, mizudashi (cold-steeped tea) is a summer staple. Dedicated cold-brew bottles with built-in filters are sold in every home goods store. Mizudashi sencha — sencha specifically blended for cold extraction — features a higher proportion of broken leaf for faster infusion at low temperature.

Tips

Cold brewing is extremely forgiving of timing — leaving it an extra few hours rarely produces bitterness. Experiment with sparkling water for an effervescent twist. Add a squeeze of yuzu or lemon for a refreshing summer drink.
