Rough or raw tea — the sun-dried, unfinished tea material from Yunnan that serves as the base for pu-erh production. Maocha is either compressed directly for sheng pu-erh or piled for shu pu-erh fermentation.

Maocha is the critical intermediate product in pu-erh manufacturing. After plucking large-leaf Yunnan tea, the fresh leaves are briefly withered, then wok-fired (sha qing) at a lower temperature than typical green tea, preserving residual enzyme activity essential for future aging. The fixed leaves are hand-rolled and sun-dried — never machine-dried — which is a defining characteristic that distinguishes pu-erh from other tea types. The resulting loose maocha can be evaluated, blended, and then either steamed and pressed into cakes for sheng production, or subjected to wo dui (wet piling) for shu production. Collectors sometimes acquire maocha before compression to sample a season's character, and some producers sell premium maocha in loose form. The quality and source of maocha — particularly from old-growth gushu trees — largely determines the final pu-erh's quality and aging potential.
