Dragon Well — China's most renowned green tea, from Hangzhou, Zhejiang province. Pan-fired in a hot wok to halt oxidation, it produces flat, smooth leaves with a chestnut-sweet, vegetal flavor and no astringency.

Long Jing has been celebrated since the Qing Dynasty and is officially designated one of China's ten famous teas. Authentic Xi Hu (West Lake) Long Jing comes from a small designated area around Hangzhou, with the most prized sub-regions being Shifeng, Meijiawu, and Longjing Village. The tea is distinguished by its hand-pressing technique: skilled artisans press leaves flat against the wok surface using precise palm movements, simultaneously fixing (kill-green), shaping, and drying the leaf. The finished product has a distinctive sword-like flat shape, jade-green to yellow-green color, and a sweet chestnut aroma. Spring-picked pre-Qingming (before April 5) Long Jing is the most valuable, when tender buds with one leaf yield the highest amino acid content. The liquor is a clear, pale yellow-green with a smooth, umami-rich, clean finish.
