Yan yun is the most prized and debated quality in Chinese oolong tea, referring to a deep mineral character, a persistent aftertaste, and a throat-warming sensation unique to teas grown in Wuyi Mountain's rocky crevices. The Wuyi UNESCO heritage area in Fujian province features steep cliff faces, narrow gorges, and decomposed volcanic rock soil that imparts trace minerals into the tea bushes' root systems. Experienced tasters describe yan yun as a stony sweetness that lingers in the throat, distinct from ordinary astringency or bitterness. The concept parallels minerality in wine — difficult to define precisely, yet immediately recognizable to those familiar with it. Only teas grown within the designated zhengyan (true rock) growing areas are considered to possess authentic yan yun.
