The Art of Re-steeping

Guide to re-steeping tea: how to get 3-15 cups from one serving. Which teas re-steep best, timing adjustments, and why later infusions often taste better.

Introduction

{{glossary:re-steeping}} is one of the most underutilized techniques in Western tea drinking. Quality whole-leaf teas are specifically designed to be steeped multiple times, with each infusion extracting different compounds and producing distinct flavor profiles.

Why Later Infusions Taste Different

The first infusion extracts the most soluble compounds: free amino acids, caffeine, and volatile aromatics. This produces a bright, aromatic cup with notable stimulant effect. Second and third infusions draw out heavier polyphenols, complex sugars, and deeper flavor molecules. These compounds are larger, less soluble, and require more contact time or energy to extract. The result is often a sweeter, smoother, more rounded cup — many experienced drinkers consider the second or third infusion to be the best.

Timing Adjustments

For each subsequent infusion, increase steep time to compensate for the diminishing supply of soluble compounds. Western method: Add 30-60 seconds per infusion. Gongfu method: Add 5-10 seconds per infusion.

Between Steeps

If you need to pause between steeps, drain the vessel completely and leave the lid ajar. Leaves sitting in residual water will over-extract. Properly drained leaves can rest for several hours without significant degradation — though flavor is best when infusions follow closely.

The Economics

Re-steeping dramatically reduces the cost per cup. A 5g serving of $20/100g oolong costs $1 for the first cup — but produces 6-10 gongfu infusions, reducing the effective cost to $0.10-0.17 per cup. This makes quality loose leaf more economical than most coffee shop beverages.
