The number of times a single serving of tea leaves can be meaningfully re-steeped before flavor diminishes to an unacceptable level. Premium oolongs and pu-erh can sustain 8-15 infusions; most black teas yield 2-4.

Infusion count is a key indicator of tea quality and a central element of gongfu brewing culture. The number of viable infusions depends on several factors: leaf wholeness (whole leaves outlast broken grades), oxidation level, roast depth, and the concentration of soluble compounds in the original leaf. Tightly rolled oolongs like Tie Guan Yin unfurl gradually across infusions, releasing new flavor layers each time. Aged pu-erh, with its dense, compressed structure and transformed chemistry, regularly sustains twelve or more infusions. In contrast, CTC black tea exhausts its soluble content in a single steep. Each infusion extracts different compounds in different proportions, creating an evolving flavor arc: bright and aromatic early, rich and sweet in the middle, and gentle and mineral at the end. Experienced gongfu practitioners often note their favorite infusion number — typically the fourth through sixth — where the tea reaches its peak balance of sweetness, body, and aromatic complexity.
