Introduction

{{glossary:grandpa-style}} is the most widespread and least pretentious method of tea preparation in China. A small amount of loose leaf goes into a tall glass, hot water is poured in, and the tea is sipped directly — leaves and all — throughout the morning or afternoon. As the water level drops, fresh hot water is added. No strainer, no timer, no ceremony.

How It Works

The method is self-regulating. The first sips, with the highest concentration, are strong and intensely flavored. As you drink and the water level drops, the remaining liquor becomes progressively lighter and sweeter. When only one-third of the liquid remains, you top up with fresh hot water, starting a new cycle at moderate strength. This creates a natural wave pattern of flavor intensity throughout the session.

Best Teas for Grandpa Style

The ideal grandpa-style tea tolerates extended contact with water without becoming bitterly astringent. Chinese green teas are the classic choice: Longjing, Mao Feng, Bi Luo Chun. Their pan-fired chemistry makes them more forgiving of prolonged steeping than Japanese steamed greens. Light oolongs (Tie Guan Yin, Alishan) work well, unfurling slowly and releasing flavor over an extended period. White tea is excellent — its gentle chemistry means bitterness rarely develops even with hours of contact.

Teas to Avoid

Japanese green teas (too astringent with prolonged contact), CTC black teas (extract too quickly, becoming bitter), and heavily roasted teas (can become overwhelming at high concentration in the first sips).

Practical Tips

Use 3-4 grams of leaf per 300-400ml glass. Start with 80-85 C water. Sip from the rim, using your lips to filter leaves. A glass with a slight outward taper at the rim helps keep leaves away from your mouth. Top up with hot water when one-third of the liquid remains. The leaves can typically sustain a full morning of continuous drinking (4-6 hours) before flavor diminishes to the point of replacement.
