Enshi Prefecture in western Hubei Province is distinguished by its selenium-rich soils, a geological feature that gives local teas unique health-promoting properties. Enshi Yulu (Jade Dew) is one of the few remaining Chinese green teas processed using steam fixation rather than pan-firing, a method that preserves the bright emerald color and intensely fresh, vegetal flavor. The technique is believed to be the ancestor of Japanese steamed tea processing. Enshi's mountainous terrain, with deep valleys and heavy cloud cover, provides natural shade and humidity that enhance amino acid content and produce teas with pronounced umami character.
