Description
A gallated catechin that contributes significantly to tea's astringent taste. ECG is the second most abundant catechin in green tea after EGCG. During oxidation, ECG is partially converted into theaflavins that give black tea its characteristic color and briskness. ECG has demonstrated strong antioxidant and antimicrobial properties, and its galloyl group enhances binding affinity to proteins and cell membranes.
